Foil packets are popular in the summer but they make great winter camping recipes too that can be cooked right over a campfire!

There are benefits beyond the fun factor when you are making one pot camping meals and grilling in foil packets.

The foil doubles as your cooking pan as well as your dinner plate making clean up a breeze.

Camp Cooking Tip: If you are using potatoes in your campfire stew in foil, make sure you cut them small enough to ensure they are fully cooked at the same time the rest of the ingredients in the foil packet are done (especially the meat … nobody likes overcooked dried-out meat.)

Campfire Tin Foil Cooking: Fold The Perfect Foil Packet

Use ONE sheet of Heavy Duty Foil or TWO sheets of the regular stuff to make sure your foil packet is sturdy enough for the hot campfire cooking environment.

Add the ingredients you like but be sure not to over-stuff the foil packet.

You need to fold the foil into a packet that closes fully but still leaves room inside for the steam to build and cook the ingredients.

Camping Cooking Tips Make Sure Your Campfire Has A Bed Of Hot Coals by CampingForFoodies for this easy campfire hobo stew recipe that cooks in foil packets

Camping Cooking Tip: Make sure your campfire has a bed of hot coals before you begin cooking.

I like cooking these foil packets on the campfire grate over hot coals but you can also set them on the hot rocks that surround the campfire; as long as there is enough heat to cook the ingredients in the foil packets, you are good to go.

When it is time to flip the foil packets during cooking, you should use Extra-Long Tongs for protection from the heat of the campfire and the hot foil packets.

We consider a good set of tongs to be essential campfire cooking equipment no matter what recipe you are making.


Flip Your Foil Packets During Cooking

Turn the packets about halfway through cooking.

Total cooking time will be approximately 20-30 minutes and will depend on the ingredients inside the foil packs as well as the temperature of the campfire.

Remove From Campfire, Garnish and Serve


When your hobo stew is done, carefully remove the foil packets from the campfire to serve.

Be careful not to burn yourself on the hot steam when you open the packet.

Garnish with a little chopped fresh parsley and enjoy.

Even though we eat our hobo stew directly out of the foil packet, I like to use acamp plate to add sturdiness.

Because we don't actually put the food on the plate, there is no cleanup after the meal; we just toss the foil in the trash and we're ready for dessert.


These foil packet meals also cook beautifully on a charcoal or Camping Propane Gas Grill.

Because we live and camp mostly in Arizona, we have to deal with fire restrictions when we are camping which means we have to cook with propane rather than campfires.

That is another reason I like this Campfire Hobo Stew Recipe … but, when I need to switch my cooking method, I've decided NOT to change the name because Propane Gas Hobo Stew just doesn't have the same ring to it! LOL

  • 2 pounds beef chuck trimmed, cubed
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 1/2 cup onions diced
  • 1 cup baby carrots
  • 1/4 cup frozen peas defrosted
  • 1/2 cup fresh mushrooms sliced
  • 16 cloves garlic whole but peeled (yes, we really do LOVE garlic that much! We put 4 cloves in each packet but they are whole cloves that really flavor the meat and veggies during cooking; you don't have to eat the cloves but the garlic lovers in your camping crowd will want to indulge in these little babies.)
  • 1 cup cherry tomatoes
  • 1 cup baby potatoes cubed (these will probably need to be quartered in order to have the potatoes sufficiently cooked at the same time as the rest of the food in the foil packets.)
  • 4 sprigs fresh rosemary these flavor your food during cooking but should be thrown out before eating
  • 1 bunch of fresh parsley chopped for garnish (optional)

Prevent your screen from going dark

  • Cube meat and toss in Worcestershire sauce, marinate a few hours before cooking.

  • Cut 4 pieces of heavy-duty foil, approximately 24 inches long (if you are using regular foil, you need two sheets per packet instead of one).

  • Set out ingredient bar and let each camper build their own Campfire Hobo Stew packet starting with the meat and seasoning it with salt and pepper before adding the rest of the ingredients.

  • Add ingredients you like and skip the ones you don't but be careful not to over-stuff the packets.

  • Fold the packet for cooking. If you need help folding the perfect foil packet for campfire cooking, watch my video for tips.

  • Cook the packets for about 10 minutes over medium heat (campfire coals or grill).

  • Turn packets and cook for another 10 minutes.

  • Total cooking time will be approximately 20-30 minutes and will depend on the ingredients inside the foil packs as well as the temperature of the campfire. Carefully open packets to check for doneness.

  • Remove the foil packets from the campfire to serve. Be careful not to burn yourself on the hot steam when you open the packet.

  • Discard rosemary sprigs before serving.

  • Top with fresh parsley for garnish (optional).
